I first came across this yummy recipe for Bourbon Chicken on Pinterest and the whole family enjoys it. I was surprised to find there's no Bourbon in it although I expect the original recipe did have.
Chop up 4-5 chicken breasts into small pieces. Heat a little olive oil in a deep frying pan and saute the chicken until lightly browned. In a small bowl whisk together 1 tsp minced garlic, 1/4 cup apple juice, 1/3 cup brown sugar, 2 Tbsps Ketchup, 1 Tbsp Cider Vinegar, 1/2 cup water, 1/3 cup soy sauce, 1 Tbsp cornflour and a pinch of red chilli flakes. When the chicken is browned add the sauce, cover the pan and simmer for about 20 minutes stirring occasionally.
We serve this with brown rice (cooked with a stock cube dissolved in the water) and green beans with sesame seeds and peanut sauce.
