Recipe - Berry Oat Crumble
One of the foody things I really love about Autumn is the abundance of yummy fruit to make a crumble, pie, cobbler with. T doesn't really eat dessert, but he does like fruit puddings in all their variations and it's a yummy way to get one more serving of fruit into C's diet. I almost always add oats to my crumble topping - they add a lovely texture.
Heat oven to 200C. In a large bowl combine 100g plain flour, 50g rolled oats and 50g golden caster sugar. Squeeze 100g butter, cut into cubes, through the mixture until crumbly. Spread out onto a baking tray and bake for 10 mins, stirring after 5 mins.
Place 400g strawberries, 100g golden caster sugar and 1.5 Tbsps cornflour in a saucepan. Cool over a gentle heat until the strawberries get soft and juicy. Stir in 500g of any other berries - I usually use a mixture of rasbperries, blackberies and blueberries but you could also use a 500g bag of frozen mixed berries. Pour the mixture into a baking dish.
Sprinkle the crumble over the fruit and pop the whole thing back in the oven for another 10-15 mins. Serve with custard, cream, creme fraiche or ice cream.
