Recipe: Zesty Pork Chops
As my husband does not eat beef and isn't a fan of lamb I am always experimenting with new flavours to enhance plain old pork chops - it adds a little variety to the steady diet of chicken, turkey and fish. This oh so simple flavour combination turned out great, 5 year old C ate 2 chops!
In a large resealable bag combine 3 parts soy sauce with 1 part lemon juice (for 5 chops I used 3/4 cup soy sauce and 1/4 cup lemon juice), 1 tsp garlic and 1 Tbsp ketchup (I used the chilli flavoured ketchup - for U.S. readers you could use chilli sauce). Keep back a couple of Tbsps to use for basting and then add the pork chops to the bag. Refrigerate for a few hours or overnight, turning once.
For cooking you can either do them in a large frying pan/grill pan or on the BBQ. Either way you want a medium-high heat and then cook, covered, for about 5-6 mins on each side. They don't dry out at all and the flavours are that delicious salty/sweet combo.
