Recipes: Autumn Pork Tenderloin

This delicious and simple little roast got us feeling very Autumnal this week!


 Rub some salt and pepper into 1-2 Pork Tenderloins (Fillets) then place in a zip bag with enough apple juice to cover (about 1/4-1/2 pint). Refrigerate for about 30 minutes....

In a bowl combine 1 can apple pie filling, a handful of raisins, a handful of chopped pecans or walnuts and 1/4 tsp cinnamon.

Place pork on a rack in a roasting pan and spoon over the apple mixture. Bake at 200C for about 40-45 mins. Let stand for 5-10 minutes before slicing.


Serve with Mashed Potatoes and seasonal veg with gravy.
