Recipe - Little Apple Puddings



I love a nice Summer pudding when berries are at their prime so I thought I'd experiment with a hot version......it was delicious!

Preheat oven to 220C. Grease 4 small ramekins.

In a saucepan combine 250g bramley apples - peeled, cored and chopped and 250g ripe pears - peeled, cored and chopped. Add zest and juice of 1 lemon, 2 Tbsps brown sugar and 1/4 tsp cinnamon. Cook, covered, over a low heat for about 10 mins until the fruit is softened, Then cook uncovered for 2-3 mins until juices thicken a little.

For the bread you can use whatever takes your fancy, either white bread, raisin or chocolate chip loaf or brioche (I used brioche this time). Use one of the ramekins as a guide and cut out 4 circles the size of the base and 4 the size of the top from the bread. Cut the rest of the bread into strips. Put the bases in the ramekins and lay the strips around the sides -you can press them together with your fingers - doesn't need to look pretty!

Spoon the apple mixture into the middle, spread butter on one side of the top slices of bread and press them on top - butter side up. Place on a baking tray and bake for about 15 mins, until tops are golden. Let cool for about 5 mins, run a knife around the sides of the ramekins and tip out, before topping with a little swirl of whipped cream.
